We start by lightly frying the chicken breast cut into small pieces. Once it has changed color, we take it out of the pan and remove the frying oil. With the help of scissors, cut the fried chicken breast into small pieces similar in size to corn kernels.

We return the breast already cut to the pan, next to the corn and add the spoonful of flour, stirring so that it integrates with the food making a thick dough. We gradually incorporate the milk, in small squirts, letting it be absorbed by the flour while stirring. Little by little a kind of thickened bechamel, without any lumps.

Once it is to our liking, we rectify salt if necessary and add a pinch of nutmeg and let it cool in a dish as if we were going to prepare croquettes. When the dough is cold, we put small portions in the center of empanadilla wafers that we close and varnish with beaten egg.
