We clean spinach and cook in salt water for ten minutes. Then we drain them well leaving them on a strainer for half an hour. Then we cut the spinach into small pieces with the knife.

In a pan, melt the butter and pour the chopped spinach and flour, stirring until everything is integrated and the flour is not visible. Then we add the milk little by little, stirring with a wooden spoon until finishing with half a liter. This will leave us one Bechamel or spinach cream without a single lump.

We give a last boil and we already have a delicious spinach cream ready for a light dinner that we can take any day.
