We have chosen to make this dish with a piece of the white veal babble, but you can still make this roast with round, corner, sirloin or any good cut for roasting that you find in your butcher shop. How to make roasted veal in the oven with vanilla puree garnish

To puree, we cook two potatoes of good size, peeled and in pieces for about 20 minutes. Meanwhile, we open the vanilla giving it a longitudinal cut and removing the inside by scraping with a knife.
