  • To make the curd lemmon, 100 grams of sugar, 2 eggs, 100 ml of lemon juice, 50 grams of butter, lemon zest

How to make curd lemmon and cherry cupcakes

We start preparing the lemmon curd with microwave help. To do this, we beat the eggs with the sugar in a bowl and once well integrated, add the strained lemon juice, mixing the whole well. We add the melted butter and the zest and when we have the very homogeneous liquid we put it in the microwave.

We give several batches of 1 minute at 800W, stirring between them. At first it will seem that it does not thicken but after two or three sessions, suddenly we will have a sweet lemon cream ready for use when cooled. We puncture with a fork the surface of the cake and we bake at 170º until the puff pastries begin to brown and the “walls” begin to rise.

We take out the puff pastry, and when they cool we distribute a spoonful of homemade curd lemmon on each one, so that it reaches the edge level. On the curd lemmon we put three boneless half cherries and we put the cupcakes in the fridge for at least half an hour so that they are ready when we are going to serve them. At that time, we put on each one a very small peppermint leaf and ready to enjoy.
