Fresh summer recipes: meats

We have offered you so far several recipes designed to make children enjoy nutritious, appetizing and, above all, fresh preparations, that are pleasant in summer. Within our special Summer with children in Babies and more we offer you a few more fresh recipes, this time focused on animal proteins.

The dishes that we suggest today will be, as always, colorful, tasty and full of nutrients, but also soft so that they are not heavy in the summer.

Minced meat roll

We start with a very rich dish that can be taken as cold cuts, and that children often love because of the soft taste: minced meat roll.

We will do it with freshly minced meat, which is especially important when it's hot. Half a kilo of meat will be mixed with five slices of bread without crust soaked in milk, two eggs, parsley, chopped garlic, very chopped onion, raisins if we like, spinach, pine nuts, bell pepper, olives and, if we want, a little very thin sliced ​​ham. Obviously the ingredients to add to the meat are optional, but the more varied the filling, the richer the contrasts of flavors will be. Kneading everything very well salt is put to taste and a thick roll is formed, like a large croquette, which is passed through breadcrumbs.

Subsequently wrapped in plastic wrap, it is stored in the refrigerator for a while, unwrapped and carefully placed in a previously greased dish. It should be put in the oven over medium heat (about 150 degrees) and leave it for at least half an hour, pricking with a needle to check that it is made inside when the pink juice no longer comes out.

He minced meat roll It could be taken hot, but cold is as it is richer, accompanied by tomato sauce or a green salad.

Colored rolls

This plate of colored rolls It is very simple and even children can help us prepare it by having a great time. We can put it as an appetizer or main course especially at dinner.

We are going to need ham and zucchini. The york simply have to take it out of its containers very carefully so that the slices are not broken. The zucchini we will scald three minutes and cut it with a pelaveruel throughout, making very thin slices.

The fillings can be very varied, but ideally mix three different. My suggestion is cream cheese with radishes and chopped cabbage, Russian salad or mashed potatoes mixed with mayonnaise for ham and a mixture of chopped chicken breast and sauteed with zucchini onion.

When we make the rolls we must take care that they are more or less of similar thickness and present them by holding them with a stick, so that they do not disarm us. They are very rich and colorful.

Potatoes stuffed with cold meat

These cold stuffed potatoes They are ideal as an appetizer and can also, with a salad or some peas, form a complete dish, as they provide hydrates and proteins.

We cook a couple of potatoes per diner, medium size, preferably new or red, with skin. We will cook them whole and then, already cold, we will cut them a hat and take out the heart very carefully.

The filling should be tasty, but not heavy for these summer dishes. I suggest a fried onion and tomato sauce to which we will add some minced meat. Once done we will add the potato that we had removed, well crushed with the fork and serve cold, decorated on top with a little white cheese and a slice of tomato that we have previously reserved. They will love to uncover the potato and savor the filling.
