Cooking with children: recipe for carrot and zucchini muffins

I had not published a recipe made with my son for a long time and it was that between one thing and another, we had not put hands together in the dough together. The other day Lucas told me: "Mommy, can I help you?", Which means: I want to cook with you (when he sees me in the kitchen).

So I started to look at recipe books to do something fun for him and to get away from the sweet recipes that I am used to and I found some Salted muffins made with zucchini and carrot I had not prepared for years. The only thing that this time, they ended up in the end "not happy" because of a major cause ...

When we reach the end of the recipe you will know that end and that major cause. For now I am leaving you step by step how to prepare these salty muffins with children and I will explain what steps he let Lucas do (now he is just two and a half years old).

Recipe of carrot and zucchini muffins

First of all, I would like to explain what is a muffin. It becomes a kind of cupcake, although much less sweet and with a recipe and quite different ingredients.

You can prepare sweet and savory muffins, although they will always carry sugar and flour, but they would be quiches or pancakes or whatever you want them to be…

For those who have never tried a muffin, I warn you that they are usually bland and have a reputation for being dry although I warn you that this is not true, but quite the opposite. At least these I have prepared so many times in my life, they are super fluffy and delicious. Obviously, they are not chocolate cupcakes (the sweet bomb) but if you are one of those who like to have a tea cup and a paste, you will surely love them.

Ingredients for carrot and zucchini muffins for 16 muffins

  • 3 carrots
  • 1/2 fat zucchini
  • 1/2 teaspoon vanilla extract or aroma
  • 1 yogurt
  • 1 teaspoon ground cinnamon
  • 2 teaspoons yeast
  • 270 gr of pastry flour
  • 80 ml sunflower oil
  • 220 gr brown sugar
  • 2 eggs
  • 1 pinch of salt

How to prepare muffins with children

  1. We preheat the oven to 180ºC.
  2. Cut the carrot and zucchini into small pieces (here the child should not enter at all because it takes a sharp knife to cut the carrots). And we put them in a chopper until they are well chopped.
  3. Mix the eggs, sugar and sunflower oil in a large bowl with the help of some rods (children love this moment).
  4. Sift the flour together with the yeast and cinnamon and add the previous mixture. Here we can let the child mix while we pour the flour.
  5. We add the yogurt together with the vanilla.
  6. Add the carrots and zucchini and mix well.
  7. We spread the dough between the paper capsules (ideally put them in a cupcake tray so they do not open in the oven).
  8. Bake 30 minutes or until a toothpick or knife is inserted, it comes out clean.

And now you will say, why is there no picture of the baked muffins? Well here is the end not happy, because I think they were an hour and a quarter inside the oven, just my son claimed me and I fell asleep breastfeeding him in bed, until I woke up from a boat because of the smell of singe ... Anyway, I guarantee that they are fantastic and that this recipe has been made many times. The cooking time depends a lot on each oven but usually around 30 minutes.
