I love summer when my nieces come to see me and spend a few days with me and my wife. Now that my son is older, having them at home makes me feel again the joy of seeing their faces when enjoying meals, although I also notice the fatigue caused by their vitality. The other day they told me they wanted to eat a Andalusian stewed chicken recipe, one that my sister prepared for them and as soon as they have explained it to me, I have incorporated it into my recipe book, because it is a very easy and flavorful chicken stew that they enjoy very much.

I am sure that you - and of course your children and nephews - will also love this recipe. This is a simple chicken stew that is very tender and juicy and that you lets have it done beforehand and serve it after heating, so it is practical for these summer days that between beaches and pools we have little time to cook.

Ingredients for 6 people

  • A chopped chicken, 1 clove of garlic, 1 bay leaf, 1 trickle of wine that we will let evaporate, 1 onion, 1 liter of broth, some strands of saffron, 75 g of sliced ​​almonds, olive oil, salt

How to make Andalusian stewed chicken

Peel and chop a clove of garlic and fry it in olive oil. We remove the garlic and reserve it. In the same flavored oil lightly brown the chicken slices and also remove and reserve for later.

We chop the onion in julienne and we poach it in the same oil, adding the bay leaf. When the onion is transparent and soft, we return the chicken and add the wine, stirring until it evaporates. Then we cover the slices with bird broth, letting our stew simmer.

In the mortar we crush the clove of fried garlic and three or four sliced ​​almonds and we incorporate them into the stew to take body. We also add a few strands of saffron to give color and the rest of the almonds.

Let it cook until the sauce thickens a little and the largest slices are cooked - the thighs and contramuslos will take a total of about 30 minutes - and we serve it in a bowl leaving the sauce aside in a sauce boat for those who want to repeat.
