With Holy Week, the days come to pamper yourself and enjoy the typical sweets of these dates: French toast, monkeys, donuts and Easter cookies. Since we have more time to be with family, it is a good opportunity to put the children in the kitchen and prepare with them some delicious Easter recipes.

We leave some suggestions, although yes, you have to consume them in moderation since most of these sweets are highly caloric.

Torrijas in all its varieties

There is no Holy Week worth its salt without a rich dish of French toast; an exquisite sweet that both children and adults like, but always consuming them sparingly, since it is a highly caloric recipe with large amounts of sugar, refined flours and fats.

Traditional Easter Mona

Together with the French toast, the Easter cake is one of the most popular Easter recipes.

The elaboration of the Easter monkey begins the previous night by dissolving the yeast in the water and adding the flour. Mix without kneading, cover with plastic wrap and put in the fridge. The next morning we took it out and let it temper.

In a deep and wide bowl we mix the liquid ingredients: three eggs (we reserve the other three), the oil and the orange blossom water. We add the preference, orange zest, crumbled yeast, 150 g of sugar (we reserve the remaining 50 g). and remove. Then add the flour, little by little, and continue stirring. In the middle of the process we add a pinch of salt.

When we have incorporated all the flour, we knead on a countertop sprinkled with flour until an elastic dough is obtained. We can add a little more flour if the dough is too sticky, but it is best to knead a few minutes and wait for the texture to change. If we go from flour the crumb will be hard.

Once consistency is achieved, we make a ball and let it rest in a slightly floured deep bowl and covered with a rag or plastic. Let rise in a warm place until double its volume. When this happens we divide the dough into two and roll. We make a hole in the center of each ball and place an egg (previously washed), cover again and double its volume.

We beat the last egg we have and brush the monkeys. Mix the 50 g of sugar with a few drops of water and, for an extra touch of flavor, with orange blossom water. We spread the sugar over the monkeys. Cook in the lower part of the oven, preheated to 180 ° C with heat up and down, for 25-30 minutes.

Carrot and almond muffins: recipe for breakfast and Easter snacks

Preheat the oven to 180ºC and prepare a tray of suitable muffin molds or capsules. Depending on the size we will get about 10-12 units. Wash the carrots, lightly peel and grate fine until you get 200 g. Mix with lemon juice and orange zest, and set aside.

Place the butter chopped with the brown sugar in a medium bowl and beat with a blender until it is spongy. Add the eggs, beat a little more and add the salt and milk. Also add the carrot and stir until incorporated in a homogeneous way. Pour the rest of the ingredients except the marzipan carrots and mix gently, continue with enveloping movement, until you have a homogeneous mass.

Spread the dough in the modes, without filling them completely, and introduce a marzipan carrot vertically, if available. Bake for about 20-23 minutes, until a toothpick comes out clean. Wait a little out of the oven before unmolding and let cool completely on a rack.

Melt the butter over low heat or in the microwave. Arrange in a large bowl with the oil, eggs, vanilla, orange blossom, salt and sugar. Beat everything well with a rod blender until it is homogeneous.

Incorporate the flour with the yeast, mixing gently, until you get a smooth and smooth dough, without lumps. Divide in two, form discs and wrap each in plastic film. Let cool in the fridge for at least 1 hour.

Preheat the oven to 175ºC and prepare a couple of trays. Stretch one of the dough portions with the help of a roller, until it is 5-6 mm thick. Cut out the cookies using a donut cutter, or with a glass and the mouth of a small bottle to take out the hole. Place them on the trays and continue with the rest of the dough.

Bake about 12 minutes, until golden brown. Let them cool completely on a rack. For the decoration, mix in a bowl the icing sugar with milk and honey until it forms a paste. Paint the cookies with it, dipping them completely or drawing irregular shapes. Before it dries, decorate with the colored shavings.

Chocolate Easter eggs cookies

Chop the butter into cubes and beat with a rod mixer with the vanilla sugar and the normal sugar, until it is spongy. Add the egg yolk and salt and beat a little more. Add the pastry flour little by little, beating at low speed. Finish by adding one or two teaspoons of milk, just enough to be able to compact the dough evenly and without cracks.

Knead by hand until it forms a smooth and smooth dough, neither dry nor very sticky. Form a flat rectangle and wrap in plastic film. Take to the fridge for at least one hour.

Preheat the oven to 180ºC and prepare a tray. Remove the dough from the refrigerator and stretch on sulfurized paper, a silicone sheet or a floured surface, using the roller. Leave a thickness of about 4 mm. Cut out the egg-shaped cookies and also take a hole in the center of half of them.

Place them on the tray, without separating them too much. Continue until the dough is finished, reworking what is left over but without adding a lot of flour or handling too much. Bake for about 8-12 minutes, until they begin to brown. Wait a little out of the oven to settle the dough and move to a rack.

Lightly heat the chocolate cream to make it easier to spread. Cover the center of the cookies that are the base of the egg, and form sandwiches with the other halves, pressing lightly. Garnish with icing sugar if desired. The sugar is usually melted with the cream, but so that it does not stain you can sprinkle the upper halves apart, before forming the sandwiches.

Easter threads

To make the dough without Thermomix, we put the eggs in a bowl in the water bath and beat them with a rod mixer until they are like a foamy cream. We remove them from the heat and add the milk, beat again. Add the flour and beat until everything is integrated, if necessary we finish stirring with a spatula.

In both preparations, we put the dough in a bowl sprinkled with flour, cover it with a cloth and let it stand for an hour. We preheat the oven to 180ºC. We line 2 baking sheets with baking paper. Sprinkle the work surface with flour and divide the dough into portions of about 45 gr.

We take a portion of dough and form a cord approximately 30 cm long. Fold the cord in half and roll each end in the opposite direction so that the cord is crossed. We join the ends by pressing to form the thread and place in one of the trays.

We repeat the procedure with the remaining dough and we bake the threads at 180ºC in 15 minute batches with heat up and down (12 threads per tray). Remove from the oven, let warm and serve.
